Dakota is off to Youth Camp today!
This happened very quickly! Yesterday to be exact! Dakota had said early on that he didn't want to go to Youth Camp this year...instead he wanted to go to Kid's Camp for one more year. Our church partners with several other churches every year for Kid's Camp and they allow the children to attend up through 6th grade so even though he is actually in the youth department at church he can attend this last year of Kid's Camp. We couldn't afford both. I was secretly pleased to hear this anyway because Youth Camp is a whole week and over $300.00 and Kid's Camp is 2 1/2 days and only 80.00.
The weekend after we returned from our Orlando vacation was the deadline to sign up and pay for Youth Camp. All of a sudden Dakota decided he wanted to go. Ummmm, sorry buddy...we just put out a bunch of money in Orlando so no can do now. No problem he said - he was fine with that and nothing else was mentioned about it until yesterday. Our youth pastor came and found me after church and said 3 girls had paid for the trip but all 3 had to back out so he wanted to invite Dakota and 2 of his middle school friends to go (for no cost - because it's been paid for!) He said the only catch is...."we leave tomorrow morning so this is kind of quick." Oh my goodness!! What a blessing!
So now I have spent all morning getting my youngest son packed up and ready to go off to his first week-long youth camp. He is extremely nervous and has tried backing out a couple of times already. This camp is a missions-based camp where they are going to be busy all day every day working in the communities - Dakota loves missions work so I have assured him he will get over there and get so involved and have a blast that the week will fly by for him. If not I'm only an hour or so away.

Sports Academy needs coupons!
Since Greg found out he has to work Sunday (Father's Day of all things....blech!) he took the day off today and he, Dakota and I hung out. They hate going to CVS with me - and I rather like going by myself anyway because then I'm not rushed and I can think and wander the aisles slowly if I choose - but I hit paydirt when THEY decided THEY wanted to go into Sport's Academy.
"Sure honey, go ahead."
He looks at me strangely because normally I am asking why he wants to go into Sports Academy...I never agree with him so quickly. What he doesn't realize is CVS is next door to Sports Academy! Bwaahaahaahaaa
He walks out with one small, tiny bag and he tells me he has just paid $55.00 for what's inside his bag. "WHAT?! Are you kidding me?!" He bought fishing lures and fishing stuff.
I had three CVS bags and he asks me "Well, how much was ALL your stuff!?"
"I paid $4.89 cash for all mine! I have receipts to prove it."
I tell him...."you need to be looking for some coupons for Sports Academy, dude!"

Random Thoughts
We have been recycling for a little over a month now. Where I live we don't have roadside pickup or anything like that. We have two containers we sort our recyclables in:
1)cardboard, paper, newspapers
2)glass, plastic, aluminum and steel
About twice a week we have to carry our boxes to a community recycling drop-off location to empty our boxes. Everyone in our family has gotten used to throwing their trash into the correct spot now. I am amazed at how much this has reduced the trash that gets picked up by our garbage truck twice a week!! Our big blue trash can used to be overflowing both times we hauled it out to the road during the week...now it's not even half full either day.
Even though I miss seeing my daughter and grandsons (who live in Hawaii) on a regular basis...I love the fact that I can call her at 2:30 a.m. when I can't sleep! There is a 5 hour time difference between us right now...4 hours when daylight savings time changes again because Hawaii doesn't participate in DST.....so those nights when I am tossing and turning unable to sleep I go sit out on the porch, pick up the phone and call Felicia and chat with her for an hour or so. Thanks Felicia!
Just found out last night Greg is going to have to work this Sunday...Father's Day. What a bummer! He'll be off tomorrow because of having to work Sunday so guess we'll be celebrating Dad's day early.

Lots going on in this household...
Sorry about not posting that much this week....lot going on in my household. I am currently working on a project and working on trying to get hired with another company (for additional work-at-home money), working at VBS at night, trying to find a place to live because we are going to be moving in about a month....so things are a little hectic. I'll update soon.

Vacation Bible School
Last night was the first night of VBS at our church. We always begin on Sunday nights so we can get all 5 days in and have the Commencement on Friday night. This was my first year in over 20 years that I didn't have a child in VBS anymore. My last "child" is now in youth and he chose to be a helper this year instead of participate in the youth VBS activities. He worked in the Crafts area last night. **sniffle sniffle...excuse me while I have myself a little cry here**
We had a great turnout for the first night. The theme is Group's Amazing Power Lab - they always have such awesome VBS. I am taking pictures this year so I was able to walk around the whole evening and watch all the action. I like that!
My mom is one of the Bible story teachers...her and her goofy glasses!
The kids enjoyed this activity in Games....trying to put one another inside a bubble!

Homeschool Freebies
A friend of mine sent me this cool site - Freebie of the Day - you can sign up to receive their posts by RSS and never miss their daily giveaways. (Thanks Debbie!)
This is another site I've been getting things from for about 6 months now. They just changed the name of it a few months ago to CurrClick. Once a week they will email me and let me know I can go to their website and download one free homeschool lesson/book, etc. I have gotten some amazing lesson plans from them. For example, yesterday's lesson was a 30 page copywork notebook on "The Declaration of Independence: The Cost." It discussed the details of what happened to the original signers of the Declaration...the price they paid.

Works For Me Wednesday: Kids & Summer
Schools out for the summer...every time I hear somebody say those words, that old Alice Cooper song goes through my head. Here's a cute version of it here:I homeschool my only child left at home now so school is always out for us. We are together 24/7. When my other children were in school though and they got out for the summer we didn't plan every minute of their days...much like I don't plan out mine and Dakota's days now.
What works for us is a simple, laid back way of life. We play at parks, go to museums (that are free), catch a movie every other week at the local Dollar Movie (on Tuesdays it only costs .50 each!), play water games in the yard with the hose, go for walks, play video games together (our newest craze is Guitar Hero and Wii Fit - we love playing those together.)
The one thing that every one of my children learned at an early age is to never tell me they are bored. My answer to that will always be something like this.... "If you are bored, I can give you something to do. Let me get a dustcloth and the furniture polish." The "threat" of more chores has a way of making kids find things to do to entertain themselves for awhile...they don't need constant entertainment or to be on the go the whole summer. Just my .02

This is such a great program!
When I am looking for something specific to purchase I try to remember to check Ebates before checking anywhere else. Unfortunately I don't always remember to do this though and I could kick myself! I had some spare time this evening and was going through some of my accounts on websites that generate money for me and I checked my Ebates account...boy was I shocked! I have $45.58 in my account so far. I had decided about a month ago to sign up for Netflix DVD rental program and I did it through Ebates. I got one month's free rental through Netflix and then I just got charged $9.67 at the end of May for my 2nd month. Well through Ebates I got $18.00 back for signing up and just doing the trial offer!
If you are not taking advantage of Ebates, you really should check it out. There are hundreds of specials at so many stores - you are sure to find something you need (when you need it.)

Cross Country Trip...conclusion
When I left off here, we were in El Centro, CA. We had stopped around 11:00 pm at a hotel because I was road-weary and exhausted after driving for 3 days straight. When I called Tina to tell her I wasn't going to make it all the way that night I could hear the frustration in her voice. They were living in a hotel room on base waiting for me to get there. The plan was for them to go look for a place to live as soon as I got there with their car and I had already been driving for 2 days while they sat in a hotel room waiting. I understood their frustration but I also knew I couldn't drive any further.
When we got up the next morning and got back on the road we were surprised at what the scenery looked like. We had been driving in darkness for hours before stopping the night before so we had no idea what it looked like up until this point. Dakota called it "an arid wasteland" LOL. Nothing but brown, brown, brown for miles and miles.
Guess what? We actually saw tumbleweeds blowing across the road!! Haha
We had to go through a mountain range from El Centro into San Diego. Most of the mountains were Indian reservations. Dakota took pictures (while I drove) of the mountains because they were just these huge rocks. It wasn't until we got closer to San Diego that we finally started seeing some trees and greenery again. What a depressing place!
We finally made it!! Yes!! After leaving FL on Sunday we arrived safe and sound in San Diego, CA on Wednesday afternoon with only one speeding ticket. First thing I did was grab hold of my precious grandbaby who was only 4 months old at that time.
We were all staying in one hotel room together at the Marine Lodge. The next few days consisted of Bryant going to work and Tina and I trying to find them a place to live. Tina didn't feel comfortable driving out there on the CA freeways yet. Me, being the Nascar driver I am, had no problem with this and actually fell in love with CA driving! I had never been to CA before so I was enjoying learning my way around this small part of San Diego that they were going to be living in. When they were affected by the wildfires in October I knew all the areas Tina was telling me about and I was hearing about on the news because of my time I spent apartment shopping there with her in March. I like that familiarity.
Bryant isn't much for doing anything when he gets off work. He likes to just come back to the house (hotel room) and rest. Since Dakota and I were visitors and would be leaving soon we wanted to explore the city. We borrowed the car one afternoon and headed out...to find the Pacific Ocean. This was actually a hard task. Where we live in FL you can go to the beach (Gulf of Mexico) and park in huge parking lots and the beach is right there. It's not blocked by house after house, condo after condo or hotel after hotel. We don't have signs everywhere telling us "private property, no parking." We had to drive for over 2 hours to find somewhere that we could actually park (without paying an exorbitant fee) and get to the beach. Even then we had to walk about 6 blocks.
Dakota asked if he could go swimming. I gave him permission but as soon as he put his foot in the water and realized how cold it was he changed his mind.
It was nice to see, but I prefer our beach back home...the nice sugar-white sand! There's nothing like it in the world!
This was March 11th, Sunday afternoon - a beautiful warm day...you can see there are lots of people out enjoying the last bit of day before the sun sets. We spent about an hour here walking the beach, collecting shells (rocks?) before heading back to the hotel.
When Dakota and I had gone out the day before we went to Cabrilla National Monument State Park in Point Loma first before going to see the Ocean. The time of year that we were there was the annual migration time for the Pacific Gray Whales as they travel from the Arctic to Baja, CA. They pass right by Point Loma and the park. So we wanted to go whale-watching. Unfortunately we got there as the park was close to shutting down for the evening and there was lots that we wanted to do (and since I have to pay to get in) we decided to come back the next day with Tina and Bailee.
Although we didn't see any whales while we were at Cabrilla, we DID get to explore some tidepools. This was great because Dakota and I had just studied this in school and neither one of us knew what these were!! I was so excited to be able to walk down in this area and see what it was all about.

When the tide is in, this area is full of water...
I know this picture doesn't do it justice, but there were so many neat little critters and creatures in these little pools of water! I loved this!
In the walls behind me are embedded hermit crabs, shells and other small creatures from when this area is full of water (high tide.)
We were back up top near the lighthouse now....this is looking down at the tidepools where we had just been.
Out in the Pacific Ocean, there are these small islands w/ mountains sticking up everywhere. I wish I had a boat...I would LOVE to go exploring!
Dakota and I stayed another day or two and then we rented a car and started our trek back to FL. It still took us three days to drive home. The neat thing about our return trip is we were able to see areas that we had missed the first time because we went through them while it was nighttime. I was hoping that Greg and I could make this trip together before Tina left CA. We love to travel and there were so many places I saw that I wanted to stop along the way and visit but I didn't want to do it without Greg since he's never been to CA either. It doesn't look like we are going to get that trip in because Tina is moving to GA in about a month. For this though -- I am ecstatic!!

Menu: 6/2 - 6/8
Baby steps...that's the best way I have found to conquer any large task such as debt reduction, spring cleaning, weight reduction, etc. Since we got the new Wii Fit Dakota has realized he needs to lose some weight. I've talked to him about his weight but I guess seeing his weight/BMI splashed across a large television screen in front of his eyes made a bigger impact.
Baby Step 1
I set a goal along with him to lose 5 lbs over the next month. This is a small, easily attainable goal we can both meet while altering our eating habits and continuing to work out daily.

When I was going through my weight loss (of 40 lbs) a couple of years ago I planned out our meals on a weekly basis. I've gotten lazy about that and gotten away from doing it. In our household it is absolutely vital for me to plan out a week's worth of menus so we all know well in advance what we are eating or else we'll be heading to a fast food drive through or restaurant in no time. Beginning today and throughout June I am going to post our weekly meal plans. If you have any great recipes you want to share leave me a comment...would love to see them.
Breakfasts
Mon - cereal w/ skim milk, handful of almonds
Tues - blueberry muffins, smoothie
Wed - eggs, bacon, grits
Thurs - cereal w/ skim milk, wheat toast
Fri - yogurt (for me) & banana, Sausage, Egg & Cheese Hot Pockets (for Greg & Dakota) - these are already in the freezer - need to use them up.
Saturday - we always go to Cracker Barrel (not giving this up)
Sunday - Breakfast Pizza (see below)

Breakfast Pizza recipe
1 pkg. McCormick sausage flavor country gravy mix, or make your own
ready made pizza crust, refrigerated pizza crust or tube of crescent rolls
tube of mild pork Sausage
1 8oz. pkg. shredded cheese
Brown the tube of sausage and remove from pan. If using the McCormick's Gravy Mix - then mix gravy together in pan with sausage drippings and follow directions on back of package. If preparing your own white gravy, follow the recipe.
Pizza crust....If using pre-made pizza crust I take a little olive oil and rub on the crust before spreading ingredients on there. If using refrigerated pizza crust or crescent rolls, spread this out on one cookie sheet and pat out until it reaches sides. Cook it for 1/2 recommended cooking time before spreading ingredients on there.
Spread the gravy on pizza crust, then spread sausage over gravy and top with cheese. Bake at 375 until cheese is melted and crust is light brown.
Lunches
Mon - Grilled ham & cheese sandwich, (ham wrapped around cheese sticks for me - I limit my bread) carrot sticks
Tues - Veggie Pizza
Wed - Chicken & Cheese quesadillas w/spinach tortilla wraps
Thurs - probably go out to eat since we are picking Greg up from airport around lunchtime
Friday - Sandwiches, fruit
Dinners
Mon - fish, mac & cheese, frozen veggies
Tues - baked chicken w/veggies
Wed - Easy Quiche
Thurs - crockpot pork chops
Friday - Homemade pizza
Saturday - Grilled tilapia w/ mango salsa, rice and beans
Sunday - roast in smoker, baked potatoes in smoker
Tues - baked chicken w/veggies

CVS June ECB Deals
Have you picked up your monthly CVS Extra Value Book yet? It looks like this:The deals in this book are good for the whole month of June. Hurricane Season
June 1st - Can you believe it is June already? That means it is the beginning of Hurricane season where I live. Constantly monitoring the Weather Channel's Tropical Update.I didn't watch TV all week (because Greg was out of town last week and I don't watch TV - he does...which means I watch it by default); anyway he was home last night and we watched the late news together and I was surprised to see that there was already a named storm Tropical Storm Arthur that had formed near Belize.
Gotta love it when the season gets kicked off like this!
